Turmeric Miso Noodle Soup

A winter soup recipe for the soul

Soup season is well and truly here and there’s nothing better than a satisfying bowl of soup on a winters day. Whether you’re trying to ward off the chills or looking for a healthy and hearty meal, we’ve got the recipe for you.

 

We are obsessed with our friend Lucy from @food_bylucy, for all her Vegan recipes and today she shares her favourite Vegan soup recipe that will hit the spot.

TURMERIC MISO NOODLE SOUP

Makes 2

 

Ingredients

- 2 cups vegan veg stock

- 1 Tbsp grated ginger + 2 pieces of ginger

- 2 garlic cloves, finely sliced

- 1/2 green chilli, finely sliced

- 1/2 shallot, finely sliced

- 3 spring onions, 1 for garnish

- Bunch of Coriander roots, roughly chopped and leaf for garnish

- 1 Tbsp white miso paste

- 1.5 tsp turmeric powder

- 1 Tbsp tamari

- 1 Tbsp Chinese rice wine

- 1 packet Noodles of your choice (Rice OR udon)

- 1/2 cup of green beans

- 1/2 cup of snow peas

- 1 bok choy

- Fried shallots for garnish

- Sesame seeds for garnish

- Chilli oil/paste (optional)

 

 

Method

• On low heat, heat a pot then add 1 Tbsp sesame oil. Throw in the spring onion, shallot and chilli and cook for 1 min. Then add the garlic and ginger and cook for a further 2 min until translucent.

 

• Add in the chopped coriander root and stir

 

• Add the miso paste and turmeric and cook for 1 min then add 2 tbsp of boiling water and let simmer for 2 min.

 

• Next add the stock and let simmer until all is combined or defrosted

 

• Add the tamari, Chinese rice wine, ginger pieces and extra chilli oil (if desired) and let simmer.

 

• Whilst the broth is cooking, cook the noodles according to packet.

 

• Then prep and roughly chop all your desired veggies and blanch them for 1-2 min on boiling water.

 

• Place the cooked noodles and veg in a bowl and pour over broth.

 

• Garnish with the coriander, fried shallots and sesame oil and more chilli if wanted.

 

• You can definitely add tofu, change or replace vegetables to what you want. Use this as a base for a delicious and nutritious meal
