Healthy Hot Choc Oatmeal

Why choose oats for breakfast? Oatmeal is also an incredibly nutritious food – it is an excellent source of fibre and complex carbohydrates, but also contains an impressive amount of plant-based protein and a little healthy fat. This is not to mention the vitamins, minerals and antioxidants that a bowl of oats contains – this budget breakfast packs a bona-fide nutritional punch.

 

Plus with this recipe…who doesn’t want to start the day off with a kick of chocolate flavour!

- 1/4 cup steel-cut oats
- 1/2 cup steamed cauliflower (I like to steam and then freeze a big batch to make this easy)
- 1/2 tbsp cacao powder
- 1/2 cup plant based milk of choice
- 1 scoop chocolate protein powder

Blend the cauliflower with the cacao, the milk and 1/2 cup water.
Add the oats to a pot with the cauli mixture and simmer until tender - about 30 minutes (steel-cut oats take longer than regular oats, but I think they’re worth the wait!).
Remove from the heat, stir through the protein powder and top with your favourites. This bowl has strawberries, cacao nibs and chia seeds
